ALL THE STEPS FOR CORRECT VACUUM PRESERVATION
1) Before you start preserving: discover the golden rules
Here are the golden rules to follow before starting to preserve with Fido jars:
- The seals must be used only once for the vacuum to be successful.
- The vessels must not be subjected to thermal shock. When placing food and drinks in jars or bottles, make sure they are neither too cold nor too hot compared to the temperature of the jar, otherwise you could cause them to break (maximum temperature change: 42° C).
- The pasteurization process cannot take place in a traditional oven or microwave.
- The seals are not suitable for contact with greasy substances.
2) The choice of ingredients
Fruit and vegetables, preferably organic, must be fresh and at the right ripeness (neither too ripe nor too unripe). Always wash them with great care. To protect your ingredients from browning caused by contact with air and to reduce the risk of bacterial contamination, proceed with a bath in water acidulated with lemon.
For the safe preservation of vegetables it is necessary to boil them in plenty of salted water and vinegar: in this way you will eliminate most of the bacteria naturally present on vegetables.
3) Checking and cleaning of vessels and seals
Before using the vases, always check that the edge is not chipped: if this is the case, the vase cannot be used.
Wash the jars with hot water and boil them before use to sanitize them from the presence of any bacteria:
- Place them in a thick-bottomed pot with the mouth of the pot facing upwards.
- Place a tea towel on the bottom of the pot and wrap each jar with other tea towels to prevent the jars from hitting each other and breaking during cooking.
- Cover completely with warm water and bring to a boil.
- Boil the jars for at least 10 minutes.
- Wash the seals by hand with hot water and without detergents: they are not suitable for use in the dishwasher and must not be boiled before use.
NB: any oxidation of the metal wire (which could occur as a normal reaction of the wet ring in contact with the air) does not affect the functionality of the jar and the pasteurization process.
4) How to fill Fido jars
- Fill the jars with your preparation (up to approximately 2 cm from the edge, 1 cm for jars equal to or less than 20 cl).
- If you insert chopped ingredients or solid ingredients, arrange them without pressing them to reduce empty spaces and cover them entirely with the chosen preservation liquid.
- If any air bubbles appear, let them out by lightly crushing the preparation with a spoon.
- Before closing the jars, carefully clean the edges.
- Check that the gasket is well inserted into the cap seat and close with the appropriate metal closure.
NB: To avoid breakages, do not place the vases on a cold surface such as marble or metal, preferably a wooden shelf). To avoid burns or scalds, handle the vases with gloves.
5) How to obtain vacuum: pasteurization
Vacuum preservation allows you to preserve food for a long time by eliminating all those microorganisms that proliferate in the presence of air.
- Place the jars in a thick-bottomed pot, with the caps facing up.
- To prevent the jars from hitting each other and breaking during cooking, place a tea towel on the bottom of the pot and wrap each jar with other tea towels.
- Cover completely with warm water and bring to a boil.
- Once it reaches the boil, close the pan with the lid and cook for the time indicated in the recipe. The Fido vases must always remain covered with water: therefore, if necessary, add hot water to replenish the initial level. Once the process is complete, let the jars cool in the same boiling water.
- Once the jars have cooled, remove them by holding them by the body of the jar, handling them with gloves to avoid burns.
6) Verification and conservation
To make sure that the vacuum has formed, try opening the metal hook: if the lid remains “glued” to the jar then the vacuum has taken place correctly. If the lid is not “clinging” firmly to the jar, you will have to repeat the pasteurization with a new gasket.
Once you have checked the presence of vacuum and once the jars have cooled, place them in a cool, dry place protected from direct sunlight (maximum temperature: 23° C).
Do not move the jars and do not stack them on top of each other: the seal could move and let air seep in, with negative consequences on the preservation of the product. Label each Fido jar marking the date and contents: before you can open the jar and enjoy the preserves, wait at least 60 days to ensure that the contents have been preserved correctly.
Before opening the jar, remember to check the presence of vacuum by making sure that the gasket is still “glued” to the jar. To open, pull the appropriate tab on the seal: so as to allow air to penetrate inside the jar.
